O LIVE is produced exclusively in our own olive mill, by local farmers who continue the traditions of decades with respect and pride. Every drop carries the soul of the Messinian land and the dedication of people who don’t see the olive tree as just a crop, but as a part of their life.
There are no industrial plantations — only hands that love what they do, and a community deeply connected to its roots.

How our olive oil is produced

At our olive mill, the olives are transported and the milling process begins within just 4 to 15 hours after harvest.
This ensures the fruit remains fresh, preserving its quality characteristics — such as low acidity — and preventing spoilage, including mold or fermentation defects.

During the olive oil extraction process, we use the most advanced machinery to achieve maximum yield and exceptional quality.
The olive paste is processed through three state-of-the-art, two-phase Decanter centrifuges, operating in parallel, ensuring efficiency and consistency at every step.

From the moment the olives enter our mill, throughout the entire process of crushing and extraction, all the way to storage and bottling, we follow practices that fully comply with international quality standards.
This ensures the superior quality of the final product.
Our olive mill is fully certified and operates in accordance with all required safety and quality regulations.

Our production process is based on strict control measures.
We monitor operations through a modern control panel, track the input and output of malaxers, record temperature with precision, and determine malaxation times. Automation ensures smooth operation to prevent errors, enhancing accuracy and efficiency at every stage of our process.

In our privately owned facilities, we have storage capacity exceeding 1,200 tons of olive oil, housed in 24 specially designed underground tanks made of stainless steel.
The olive oil is stored under controlled temperature and lighting conditions that preserve its freshness and quality.

Our vision is to share the authentic, high-quality Messinian olive oil, with respect for the land, its people, and the values of tradition.

O LIVE olive oil is produced at the Avrilionis Olive Oil Mill by producers from Messinia.
